This morning, I was caught off guard by the sight of a bright pink hummus-y looking spread! I come to find that it was made with roasted beets, so I decided to give it a try.
First, you’ll need to roast your beet! Preheat your oven to 375 degrees F.
Then, chop off the green top and the stringy bottom of your beet.
Then, lightly oil the surface of your beets and wrap them in tin foil.
When oven is ready, bake covered beets on baking tray for 45ish minutes.
While they are baking, go ahead and mince your garlic.
Gather the rest of the ingredients and blend them together.
This should make a fairly basic hummus. After your beets are done, take them out of the oven and let them cool for about 10 minutes.
Then, peel and chop your beets, and add them to the blender with the hummus.
Let the beet hummus cool in the fridge for at least 30 minutes, and enjoy!
