Thousand Island Chickpea Sandwich

Garbanzo beans/Chickpeas are one of my favorite vegan staples! Not only can you use them in hundreds of ways, but also eating them plain & mashed up is delicious as it is!! It was such a beautiful spring day today here in Lexington, Kentucky- so I thought I would sit outside and make me a chickpea sammich!

All you need is Bread, a can of Chickpeas, lettuce, onion, cucumber, and “Just” Thousand Island Dressing!! It was super easy, filling, and tasted amazing!

  1. Looks great! I love spring & summer fresh sandwiches. I used to make little tea sandwiches for the kids, some would be cucumber, some tomato…. I would love some little tea sandwich ides for vegans if you have any? Thanks, jen


    1. Thanks, Jen!! Yum, those little tea sandwiches are the best in the summer. Some of my favorite & easy sandwiches are mashed avocado ones, and zucchini and hummus ones! I saw a recipe on Pinterest for a sun-dried tomato spread that I think would be really good for little tea sandwiches too. I need to try it out!
